For the first time chicken egg protein made that does not come from chicken


The Dutch startup FunGeneX was the first to succeed in making chicken egg protein without the need for a chicken. The protein is made with ovalbumin, a protein that provides the binding properties. Genetically modified fungi can produce ovalbumin from sugar. The chicken egg protein is made in fermentors, in which products such as cheese and wine are also made. This production method is more sustainable than when the protein is produced via the chicken. The chicken egg protein can be used in various food and drinks such as bread, dairy and sauces. It is expected that the protein can be commercially produced within four to six years.
