Goelong Goelong Surinamese pancakes
A recipe that I'd like to share with you
Goelong Goelong also known as the colored pancakes (crepes) filled with tasty shredded coconut. The original Javanese name is Dadr Gulung or Dadar gulung. and popular among Surinamese parties and celebrations
Ingredients filling:
- 5 tablespoons brown sugar
- 100 grams of fresh grated coconut
- 1 cup of water
Ingredients batter:
- 2 cups of coconut milk
- 6 drops of red food coloring
- 2 eggs
- 150 grams of flour
- Pinch of salt
- butter
Preparation of the filling:
Put a saucepan over heat and add 1 cup of water in it and the brown sugar and stir regularly until the brown sugar is completely dissolved.
Then add fresh grated coconut and keep stirring continuously. If the coconut and the sugar dissolved in the water. remove the saucepan from the heat.
Setting the coconut mixture aside and allow to cool.
Preparation of the batter:
First mixing the red food coloring with the coconut milk. The coconut milk then get a nice pink color.
Then whisk the 2 eggs in a bowl until they are light and frothy, then add the coconut milk.
After this, the flour and a pinch of salt adding to the egg mixture and mix well with a whisk. Then make a smooth pancake batter arises as a result.
Fry the pancakes then in a nonstick skillet as thin as possible. Always use a little butter or oil.
Enter the last pink pancakes with sugar-coconut filling, and roll all the way until they are tight.
